… truffles!!
At the Centro Nazionale Studi Tartufo in Alba, Piedmont, you can learn all about this costly delicacy:
- what it is
- the various species available
- the difference between the white and black varieties
- stories and legends
- discover the technical terms using the glossary
- when to pick them
- download an information leaflet
Whilst enquiring about the centre I was taught how to distinguish (using the sense of smell) between a freshly picked (not ready), mature (perfect for eating) and old (rotten and past it!) truffle. Now I shouldn’t get ripped off when I go shopping for them!!

For someone like me who lived for 23 yrs twenty minutes away from Alba and among the Monferrato/Langhe hills, I can only love truffles! They are wonderful on freshly made “taiarin” and on the ‘carne all’albese’. I only like the white ones, though. The black ones have a foul taste for my nose. I am from Piedmont too, but I have to admit I do not like truffles. *blush* I tried both the white and the black one, but they are too strong for me. My dad loves also “agnolotti al tartufo”, “fonduta con tartufo bianco” and “asparagi e uovo all’occhio di bue al tartufo”.
